From Heather to Hearth: The Churchill Bar & Terrace Brings Orkney to Marylebone this Winter with Highland Park

LONDON (November 3, 2026) – This winter, The Churchill Bar & Terrace at Hyatt Regency London – The Churchill brings a taste of Orkney to Portman Square with the launch of its new winter terrace, From Heather to Hearth.
Created in partnership with Orkney distillery Highland Park, From Heather to Hearth takes guests on a journey from the Scottish archipelago’s windswept landscapes to the warmth of a fireside terrace in the heart of London, featuring an Orkney-inspired menu, seasonal Highland Park whisky cocktails and drams, and table-side tasting rituals made for long evenings in good company.
Running until April 2027, the new terrace takes its inspiration from Highland Park’s island home in Orkney, where heather-rich peat and wild, heather-covered landscapes shape the character of its whisky. The nature and craftsmanship of the islands run through every part of the terrace, from the produce and whisky to the design of the terrace itself.
From Heather to Hearth
The journey begins at the entrance, where guests are greeted with an arch of heather woven through with green foliage. Beyond it, the terrace takes on the colours of an Orkney hillside: heather fills the planters along its length and cushions in heather pink and soft greens line the seating. Strata blankets – reminiscent of the Orkney land, sea and sky – throws, and candlelit lanterns on every table add warmth and texture, inviting guests to settle in on a cold evening.
Framed by armchairs and glowing lanterns, the hearth forms the heart of the terrace, inviting guests to gather, share a dram, and talk long into the evening. Nearby, a statue of Sir Winston Churchill offers a further connection to Orkney, which he visited during his extensive travels across the British Isles. The inviting fireside setting also pays tribute to the open, welcoming home he and his wife Clementine kept for family, friends, and lively conversation.
Beside the hearth, a bound book invites guests to leave a note for the person they’d always save a seat for, becoming a living collection of shared stories, memories, and meaningful moments.
The Orkney Menu
The menu draws on the Orkney larder and seasonal produce the islands are known for, including Atlantic seafood, beef and lamb, mature cheeses, oats and barley. Every dish is conceived to be enjoyed slowly and in company, with Highland Park cocktails and drams on hand to complete the culinary journey.

About Highland Park
Highland Park was founded in 1798 in Kirkwall, Orkney, by local church beadle and part-time whisky smuggler Magnus “Mansie” Eunson. Over 200 years later, we’re still making whisky on the same site in Kirkwall, Orkney—and still following Mansie’s example by doing it our own way.
Our award-winning whisky is renowned for its unique flavor character fully complex, and expressively deep, which finely balances sweetness of sherry-seasoned oak cask maturation with a subtle hint of smoke from Orkney’s heather-infused peat. Highland Park 18-Year-Old has been named “Best Spirit in the World” on multiple occasions by American whisky expert. F Paul Pacult and was ranked the #1 “Greatest Single Malt Scotch Whisky of the 21st Century” by Robb Report.
Highland Park’s Orkney provenance is what makes us different by nature. Far from the mainland and far from the mainstream, we continue to be inspired by our island home’s awe-inspiring landscapes, temperate climate and creative culture—all of which informs the way we combine craft and creativity to make whiskies that can’t be replicated anywhere else on earth.
